Looking for a flavorful main course ready in under an hour? This Golden Baked Halibut in Herb Cream Sauce is quick, elegant, and comforting. I had several halibut recipes to choose from and asked my husband to pick one—this was the winner. The dish is simple to prepare and delivers great texture and flavor: flaky halibut baked on a bed of sweet onions with butter, herbs, grated cheese, and a crunchy breadcrumb topping.
This recipe proves that uncomplicated cooking can be the most satisfying. The halibut bakes until tender and moist, while the onion bed softens and soaks up the buttery herb sauce. A golden, savory crust forms from the cheese and breadcrumbs, making the fish feel special enough for guests but easy enough for a weeknight dinner.

How to Make Golden Baked Halibut in Herb Cream Sauce
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with foil for easy cleanup and lightly butter or oil the pan.
- Arrange the sliced onion rings in a single layer on the baking sheet and dot with slices of butter.
- Place the halibut steaks on top of the onions and butter.
- In a bowl, combine the sour cream, mayonnaise, garlic powder (or minced garlic), dried thyme, dried basil, lemon pepper, seasoned salt, and a little black pepper. Reserve about 1 cup of this sauce to serve at the table.
- Generously spread the remaining sauce over each halibut steak. Spoon a few dollops of sauce over the onions as well.
- Sprinkle grated Parmigiano over the fish (and a little on the onions if you like).
- Top each fillet with a generous layer of Italian breadcrumbs or panko.
- Bake until the fish is opaque and flakes easily with a fork and the breadcrumb topping is golden, usually about 20–30 minutes depending on thickness.
- For extra color, place the pan under the broiler for a minute or two at the end, watching carefully to avoid burning.
- Garnish with chopped Italian parsley and a light dusting of paprika if desired. Serve with lemon wedges and the reserved sauce.
Bella’s Tips and Kitchen Notes
Halibut is a lean, firm white fish. Baking it atop buttered onions helps keep it moist and adds sweet, savory depth to the sauce. If your fillets are very thick, add a few minutes of baking time; if they’re thin, start checking earlier to prevent drying out.
This method works equally well with cod, haddock, sea bass, grouper, or any other firm white fish.
What to Serve with Golden Baked Halibut in Herb Cream Sauce
This halibut pairs beautifully with simple vegetables—steamed or roasted broccoli, asparagus, or mixed colorful veggies—along with roasted potatoes, rice pilaf, or a crisp green salad.
For an Italian-inspired meal, try serving with:
- Roasted green beans
- Lemon asparagus
- Garlic sautéed spinach
- Creamy polenta
- Roasted garlic and rosemary potatoes
- A crisp fennel and orange salad
